材料:

 

牛柳 300g
菠蘿 小罐
甘筍 1條
扁豆 8至10條
薑 3片
蒜頭 1小粒,切片

 

 

醃料:

 

生抽 半茶匙
糖 1/4茶匙
粟粉 半茶匙
胡椒粉 少許

 

 

芡汁:

 

生抽 半茶匙
蠔油 1茶匙
糖 1/4茶匙
粟粉 1茶匙
菠蘿汁或水 4湯匙

 

 

做法:

 

1. 牛柳切粒,用醃料醃15分鐘備用
2. 菠蘿、甘筍、扁豆切粒備用
3. 用1湯匙生油起鍋,爆香薑片和蒜片後,放入牛柳粒,煎至八成熟
4. 再放進甘筍和扁豆粒略炒,最後才放入菠蘿粒
5. 將所有材料炒熟後,倒進已調好的芡汁,快炒至均勻便可上碟享用

 

 

小貼士:

 

1. 醃好的牛柳粒在煎之前加1茶匙生油拌勻,會更加嫩滑
2. 建議選擇新鮮菠蘿,味道會比較鮮甜可口
3. 菠蘿不宜煮太久,所以最後才放入,略炒後便要上碟
